Cheesy Grits (Vegan, Gluten Free, Oil Free)

Cheesy Grits

Ingredients

  • 1 cup water
  • 1 teaspoon apple cider vinegar or lemon juice
  • 1/2 cup raw cashews
  • 1/4 cup nutritional yeast
  • 1 teaspoon sea salt
  • 1/2 teaspoon paprika
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 4 cups vegetable broth
  • 1 cup grits

Optional

  • 1/8 teaspoon cayenne

Directions

1. Combine all ingredients, except broth and grits, in a blender and process until completely smooth.
2. Meanwhile, whisk together broth and grits in a sauce pan. Bring to a boil and then simmer over medium low heat, whisking constantly, until thick and bubbly.
3. Pour cashew mixture into the grits and continue to whisk until thick and bubbly again.
4. Remove from heat and let sit 5-10 minutes before serving.
